customers By Gracie MacDonald This is not your ordinary lunch spot.Hidden amid a maze of halls and the cafeteria at Le Triolet is a restaurant that serves up some of the best food in town.And it’s practically giving it a way.The blackboard on the wall is one of the only reminders that the the room was once filled with desks and that this is a high school.But despite the thick tableclothes and candlelight, this little restaurant is still a classroom of sorts.No, the service is not perfect.And you may have to reserve three weeks in advance.But it would be inexusably petty to complain.After all, the waiter is a 17 year-old student, the escargot entrée costs $1.25, and the wine mark-up is 50 cents.WILLING GUINEA PIGS La petite bourgonne ‘employs’ only students, and its customers are the willing guinea pigs for some of the 250 students in Le Triolet’s three-year food school.Pig is the operative word here.It takes all the self-control you can muster not to overeat on delicious food at one-third the regular cost.The vocational program trains students in one of three area : table service, meal preparation, and pastry and baking.And according to one of their teachers, graduates have all the qualifications the Institute de Hôtellerie et de Tourisme in Montreal could give them.“We don’t have Ritz Carlton or Chateau Champlain out here (in the Townships).What we need are good workers to look after the tourists,” says teacher Jacques Latu-lippe.The goal of the program, he says, is not to turn out chefs, but people ready and willing to apprentice.Graduates find jobs in local hotels and resorts.Although he admits that some may be underemployed, Latulippe said this week that everyone who graduates gets a job in the field.“I get calls all the time from the hotels.They want more graduates than I can give them,” he said.BLACK FOREST CAKE Students learn to make and serve classic French food, such as locally harvested smoked trout, scampis and Black Forest cake.Although most of the menu is set by the Education Ministry, there is also some room for local variance, hence the trout.Latulippe said that teacher scour local eateries to see what they’re serving.He says it’s Le Triolet, is coauthor of Premier volume de cuisine professionelle, a text designed to complement the courses taught in Le Triolet and nine other cooking schools in Quebec.The book, availiable only in French, is not just a recipe book.Most of its pages are devoted to the such techniques of making a plate look appealing, the difference between various knives.Latulippe.who has already published eight educational books, said the book is proof the school is still on top of its field after 10 years of operation.Latulippe has been at the school since it’s beginning, and said his years of experience teaching the vocational course have taught him what students need to know.Paul Lessard of the Sherbrooke tourism bureau said a well-trained workforce for the growing industry here is vital.He praised Latulippe’s students because they learn more than just how to make food taste good.“It’s not just type food on the plate that’s important.it's the way it’s presented.” Latulippe and Jeffrey Meyers’s exhaustively researched biography which follows the Carlos Baker definitive work by some sixteen years.Baker’s A Life Story looms over most subsequent biographies of Hemingway as a formidable presence thanks to its wonderfully readable prose and rich narrative style.Other studies of the Oak Park, Illinois-born writer pale by comparison, and unfortunately Meyers’s is no exception.There is no question that Meyers, a professor of English at the University of Colorado, knows his subject and the writings of Hemingway intimately; there are new shadings of understanding revealed about the book’s hero in all aspects of his life.The shortcomings of this biography are not in the realm of knowledge of the man in focus, nor in the area of critical appreciation and analysis of his major work — they occur in the stylistic repetition that Meyers employs in discussing Hemingway’s life and in a certain tedium that creeps in as the narrative unfolds.Baker’s forte was in drawing the reader into Hemingway's life; his dangerous flirtation with the Spanish Civil War, or his introduction to the big game hunting in Africa.Meyers’s predictable style of unravelling the mysteries of his subject’s life detract from one of the most rewarding aspects of biography — the feeling that the reader is living the life with Hemingway and experiencing what it must have been like to see the world through his eyes.Factually Meyers’ biography is as revealing as Baker’s, with perhaps the benefit of many years of hindsight, particularly in the areas of discussing the final year of so of the writer’s troubled life, and in analyzing the several posthumous works, A Moveable Feast (the most famous example of a great writer’s inability, or refusal to adopt correct spelling!), Islands In The Stream, and some unpublished Nick Adams stories.It is curious that Meyers does not acknowledge the aid of Mary Hemingway, the author’s fourth wife, in his preface to the book, and that her own appearance in his narrative as much as relegates her to being a mental lightweight whose conversations with her husband could never be very intellectual in nature.This is most strange in light of the interesting and revealing book that Mary Hemingway wrote, entitled How It Was, which does not give this impression at all.Meyers tells Hemingway’s life story in a detailed, often too meticulous fashion ( an appendix on Hemingway’s illnesses and injuries is one example of Meyers’s penchant for cataloguing aspects of Papa’s life), but at the end of the 572 pages of text the reader has felt nothing on the anguish, joy, frustration, euphoria, despair, triumph, and other of the board range of human emotions that Carlos Baker’s biography of Hemingway allowed the reader to share in his documenting this unforgettable man’s story.RECORD REVIEWS Wire Train TEN WOMEN (COLUMBIA-415 RECORDS) It’s taken them three albums to really get their act together, but San Francisco’s Wire train give evidence on TEN WOMEN that they are poised to add their name to those of American rock bands such as the Hooters, Lone Justice, Los Lobos, and the Smithereens who are playing a brand of music that makes you sit up and take notice.Kevin Hunter’s images reveal that his songwriting is rather Dyla-nesque (as in Zimmerman, not Thomas), and that they are as unpredictable line to line as any of the early, scrufflin’ Dylan: “Her phantom glory is fading/ She melts from the frescoes to floor/ The bread in a vault he’s been saving/ The wine he licks from the floor”, is but a taste of the imagery that mo-tivates “She’s A Very Pretty Thing”.If TEN WOMEN has an epic track on it, then “Breakwater Days” must be it.This song was probably heavily influenced by the time that Wire Train spent in London, England in the summer of ’86, because the mood is certainly closer to something by Ray Davies of the Kinks than it is to anything they might have heard in their native San Francisco from, say, The Airplane.Early bet for a breakout single from Wire Train might be the lead cut on the record, “She Comes On”, which has a large vocal chorus and a clever hook laid on ikw »! We i make < fabulous with ponry style designed especially lor you.Whether shod or long, straight or curled, ml create a look to bnng out the best in youl An appointment is not necessary 25 ST-PATRICE ST.magog • 843-4349 Micheline Roy owner some neat.Byrd-like riffs that tinkle in the background as Kevin Hunter vocalizes with easy, throwaway delivery.If this album can generate enough FM airplay, or should a single sail into general hearing, then Wire Train can finally say they’ve paid their dues and everyone can enjoy this group’s heady lyrics and fine harmonies.VIDEO SCREENINGS BLUE VELVET (KARL LORI-MAR VIDEO) The highly arty opening of David Lynch’s film BLUE VELVET may very well scare off a few unenthu-siastic viewers of his celebrated little film — shots of a man watering his lawn: cut to the man writhing in hideous pain : cut to the grass on his lawn : cut to close-up of beetles or insects engaged in a deadly struggle beneath the foliage — but once the forced symbolism involved in his dissection of the innocent town called Lumberton is out of the way, what unfolds is one of the strangest trips in contemporary film.When a crusading young man (Kyle Maclachlan) finds the gruesome surprise of a human ear on a lawn, his report to the police brings him into contact with the detective who is daddy to the other lead in the movie, Laura Dern, who is just perfect as the wide-eyed, naive young thing that the boy confides in.She tells him that there have been strange goings on at the apartment of the beautiful Isabella Rossellini, and his decision to spy on this haunted young woman leads to some unexpected complications.Rossellini is being manipulated by a drugged out Dennis Hopper who brutalizes her and humiliates her in some of the most graphic scenes this side of a genuine porno flick.Maclachlan gets caught up is some hideous plot that defies summarization, but suffice to say that it leads to a rendezvous with one of Hopper's pals who does the most insidiously evil lip-synch job on Roy Orbison’s “In Dreams” that you will see this side of CABARET.The underbelly of cheery little Lumberton turns out to have unbelievably gross slugs crawling around on it, and Lynch’s film is all the most engrossing because of its Disneyland approach to perversity and criminality.David Lynch has given us two previous films that broke a lot of conventions (ERA-SERHEAD and THE ELEPHANT MAN) but they were nothing like the odd perspective on American life that he represents for us in the quirky but unavoidably controversial BLUE VELVET.(VIDEO AVAILABLE AT LE CLUB VIDEO, QUEEN STREET.LEN-NOXVILLE ; Bean has tied flies as a hobby and to use for fishing since he was 10 years old but about 10 years ago he decided to recreate some of the classic patterns of flies.BEGAN IN 1600s Fly-tying began in the 1600s in Britain, says Bean.In researching some of the old patterns created when the British Empire was thriving, Bean found different materials had been used and the designs had been more colorful.During the peak of the British Empire in the 19th century, the millinery trade (concerned with RKCORD/PKRRY BEATON Haul Bean has achieved world renown for his fly-tying, and has even designed flies for Diana, Princess of Wales, and former U.S.president Jimmy Carter’s wife Rosalynn.His wife Maureen translates her enjoyment of fly-fishing into watercolor scenes.making and selling women’s hats) had access to many different feathers because the empire was spread around the world.After the first world war when the empire started to collapse, access to the wide variety of feathers was limited and so different materials had to be found, says Bean.He says fly-tiers had to switch from feathers to fur.In recreating the designs, Bean uses, among others, the feathers of Macaws, Toucans and the Indian Crow from South America and the Jungle Cock of India.Some patterns also require seal fur and peacock berl, the fibre of the peacock feather.“They're exotic materials.They’re very hard to find,” says Bean.& K MOSTLY WHITE Bean says even using turkey feathers in some of the flies is a challenge because most turkeys are domestic and have white feathers.“Try to find a brown turkey,” he says.Bean is considered among the best fly-tiers in the world and has a network of feather suppliers including pet shops and zoos.It takes Bean about 20 hours to complete one fly and some of his designs required him to develop a special technique to mount the larger feathers.Tying down a broad feather is akin to stuffing a ship into a bottle.The feather fibres have to be gathered together so they can be secured into the head of the fish hook like the masts of a model ship that are flattened down so the vessel can be inserted into the bottle.The difference is that the masts of the ship are intended to spring up afterwards.The feather, on the other hand, must remain flat, sitting up like a dorsal fin on a fish instead of collapsing and bunching up.Bean’s technique is to separate the feather and mount each section one at a time.The task is made easier because the fibres in the feather act like “velcro” and adhere to each other, he says.RE ALIGNS PATTERNS Still, the task is by no means simple.The different sections have to be matched so the patterns on the feather are re-aligned.The patterns Bean creates are simply what strike him as the most appealing and colorful.He says most of the flies are not designed to look like food.Bean says many fly tiers think their fly “is going to catch everything in the lake.” But Bean says no one really knows why a salmon will strike a fly because when it comes into a river or stream the fish has no food in its stomach.It’s there to spawn.“Salmon don’t come into the river to eat,” Bean says.“Everyone has their own little theories and I have my own : I don’t care and I don’t want to know.” Some of the flies are intended to look like food, he says.“Trout streamers” are supposed to resemble minnows.However, one display of 20 streamers includes a blue fly because the color was needed to balance the display, says Bean.Bean is careful to not copy an existing fly.Each fly he creates is researched to make sure his fly pattern doesn’t come close to any other design.TRIED SCULPTING Besides tying flies, Bean has also tried his hand at sculpting and one of his works, an atlantic salmon, is also on display.Bean says the sculptures show what the fish really look like when they’re pulled from the water.When a specimen is stuffed by a taxidermist it loses some of its co- lor, he says.Bean makes his living manufacturing fishing lures.His “trout spinners” are sold across eastern Canada.Bean got started intemationaly when Maureen took one of his flies to Joe Bates, an outdoor writer.Bates wrote a story about Bean and his flies and things took off from there.Two flies in the exhibit are of particular interest.One is named for Dianna, Princess of Wales and is displayed with a letter of appreciation from Buckingham Palace for the “beautiful” fly.Another fly was designed for Rosalynn Carter, wife of former president Jimmy Carter.The display is accompanied by a letter of appreciation and a photo of her flyfishing.Everything on dislay is also for sale.The price tag for the royal fly is $400 but Bean says the average price for one of his creations is $150.Bean doesn’t mind selling his works.“If been hanging in my home now and I’ve had my pleasure from it,” he says.Maureen takes her sketch pad on the fishing trips to Lake Matapédia and does the rough work for her painting then.During the winter
