JAKE BRENNAN/CORRESPONDENT 1 < gST Housed in the former Norton family home in Coaticook, the Musée Beaulne has served as everything from an exhibition hall for local artists to a more permanent collection of Norton family relics on a rotating basis.By Jake Brennan Record Correspondent People say, ‘A museum in Coaticook?’ You know, it’s funny when you look at a small town with two or three houses and a church, and they have a museum!” Although Coaticook is much bigger these days than 86-year-old Musée Beaulne volunteer Françoise Maurice would suggest, her point is well taken.Most small towns don’t have a museum at all, let alone one as nice as the Musée Beaulne, housed in the elaborate neo-Queen Anne style Norton family residence.Although thriving today as it welcomes throngs of visitors to a temporary exhibition vernissage, the museum’s birth was somewhat unintentional.Citizens were asked to bring their an- tiques for a show in celebration of Coat-icook’s centennial in 1964.That summer, exhibits of the collected objects rotated monthly at the library.At the end of the exhibitions, many people didn’t want their articles back, so they gave them to the town.Maurice explained that her aunt, Denise Beaulne, “was born in Coaticook, always lived here, and she loved those things! fine dining is a Townships tradition Food takes on new meaning at festival SOUTHAM .- .'< '¦ * .s .y^ ïÆSStma œsSæ&xx I "SSSSS?* v&ms'a SE Such culinary innovations from the recent High Lights festival are being talked up by Montreal chefs as they reflect on the cooking of more than 30 visiting chefs from around the world.The highlight was a dinner honouring veteran Quebec chef Marcel Kretz at Cube restaurant.By Julian Armstrong Southam News Why not add a chunk of pork to a lobster and lentil fricassee, or combine fresh oysters and noodles in hot oyster broth?Or how about filling ravioli with butternut squash, or serving a chocolate and caramel mousse in a tumbler, with chocolate rimming the glass?Such culinary innovations from the recent High Lights festival are being talked up by Montreal chefs as they reflect on the cooking of more than 30 chef visitors from around the world.Eating my way from one festival table to another - from the opening Australian-inspired gala through Michelin-starred French and Italian dinners to a banquet cooked by three top Canadian chefs - I’m savouring some exceptional tastes, fine ingredients and outstanding wines.Although some visiting chefs played it safe and had the products they know and trust shipped in, Quebec ingredients were made to taste their best at dinner after dinner.Serge Dansereau, who runs the Bather’s Pavillion in Sydney, Australia, liked the Quebec venison he roasted at the Sheraton Centre, and the baby greens and crab he combined in a lively Thai-flavoured salad.Just how much Quebec food and cuisine have improved in recent years was highlighted at a dinner honouring veteran Quebec chef Marcel Kretz at Cube restaurant.Kretz raved about the tender kid (baby goat) chef Claude Pelletier used to make a rolled roast stuffed with herbs and mushrooms.The menu marked the vast changes since 1972, when Kretz cooked dinner for the Prosper Montagne gastronomic club.Kretz said the baby goat was the biggest change.Thirty years ago, kid, when available, came the size of a large calf.Now, said Kretz, the popularity of the meat with the Italian and West Indian communities has meant that small, more tender animals are available.Duck has changed, too, he said of the thick, tender slices .of Col Vert ducklings that were served medium-rare on a bed of rapini with lentils.“Back then, we always used an orange sauce.And you couldn’t serve duck rare.” “Today, you have dozens of places producing duck and other game birds, and people enjoy the meat rare.” Pelletier’s almond-coated potato cake was another switch from 1972.Instead of deep-frying it, as Kretz had, the chef baked it, seared it quickly in butter, then added tiny green pea sprouts.High Lights festival highlights • Quail and eggs.Visiting,Italian chef Fabio Rossi filled roasted quail halves with pureed rapini and set them on a bed of pureed potatoes at Le Latini.Then he added tiny, hard-boiled quail eggs.• Pork meets lobster.David Van Laer, whose Paris restaurant Le Maxence rates a Michelin star, simmered pigs’ feet and dropped tender nuggets of the meat into a lobster sauce alongside pieces of the shellfish - about as far as a chef can get from Quebec’s traditional pigs’ feet ragout.• Oyster noodle soup.Fresh oysters also had surprise companions at the hands of Gordon Bailey, chef at The Inn at Bay Fortune, P.E.I.The oysters, from his home waters, had their usual fresh, raw effect, a perfect accent to a Parmesan-flavoured oyster-juice bouillon floating with noodles.• Mushrooms over soup.A cream soup made with frogs’ legs and duck foie gras was heaped high with tiny wild mushrooms at the hands of Burgundy chef Jean-Michel Lorain.It was so good, we used teaspoons to spoon it up slowly.Desserts soften up.Serving mousse in a tall glass is the latest Paris trend, pastry chef Gilles Marchai of Hotel Le Bristol in Paris demonstrated at the Ritz.He reports gelatin has been phased out in favour of soft, runny mixtures.He blended chocolate and caramel in a tumbler, topped it up with vanilla ice cream and added a dark chocolate ring on the rim of the glass.Fusion confusion, anyone?Duck foie gras on top of potato cake and red snapper?While everyone at my table happily consumed this creation, one French chef said the foie gras addition was over the top and called it an example of “fusion confusion,” or blending too many ideas on a plate.Rocco DiSpirito, who runs the big Union Pacific restaurant in New York and came cooking to Toque! restaurant, said chefs have moved beyond contrived blends of cuisine.Today’s cuisine is “post-fusion,” and any chef worth his salt has on hand Asian seasonings like ginger, miso, miron, galango, “and all the versions of hot, sour, salty and sweet,” DiSpirito said.As an example of lively flavouring, he served food writers scallops he’d brought from Taylor Bay off Cape Cod.“They’re super-sweet, so I add tomato water, something sour,” he said.“They needed salt, so I added it and sea urchin and mustard oil.” A chef needs classic culinary training to cook food correctly and handle new flavourings, he said.Classic training is vital, in his opinion.“Thanks to all the French guys who came to the States in the 1950s, we learned how to cook.” Australian chef Scott Webster warned against overseasoning in the name of variety; for example, Thai curry with lobster.“It’s wrong - the Thai seasonings cover the lobster flavour.Ginger and lemongrass are both very strong, and too much of either in a dish will overpower the food.Thai cooks know to use small amounts,” he said.Parisian Eric Frechon set Nova Scotia lobster in gazpacho with a layer of pureed avocado beneath.Chefs have to think carefully about mixing cuisines and keep flavours simple, said this chef, one of a group of French chefs to start a trend toward simpler, bistro fare prepared with classic techniques.È March 15-March 21, 2002 page 3 TALK OF THE Townships — —¦¦¦¦in !'¦ THE — ii ¦¦¦¦¦ A fine selection of museums and galleries make the Townships a mecca for artists and art-lovers Townships’ artists find common art ground By Tricia Davidson Record Correspondent Sherbrooke’s Musée des Beaux Arts’ exhibit Merci aux Artistes is more than just an honourary exhibit, but also an opportunity for three Townships’ artist from diverse backgrounds to find a common ground within their art.Patricia Barrowman, Gregory Keith and Manon Carrier are the featured artists in Merci aux Artistes, ending this Sunday, which was originally designed to recognize those who donated their works for the 2002 edition of the Soirée des Beaux-Arts held on Feb.12.The largest annual fundraiser for the Museum consisted of an evening of discourse, comestibles and an auction that raised more than $26,000 this year “At the end of the auction they choose three artists from a drawing of names.Then they give a thank you exhibition," noted Barrowman, a painter who studied at the Nova Scotia College of Art and Design, and now resides in South Dunham.“I found out on Feb.15 that I was in the exhibition next March and I thought, ‘oh good, that gives me a year to prepare.’” In short order, Barrowman assembled 13 pieces ranging from charcoal sketches to oil and acrylic paintings to sculptures.All of the selected works were items that surrounded her in her studio, or were items that she was working on.“All of the work is basically black and white with a bit of brown,” continued Barrowman.“Speaking with Manon (Carrier) is interesting.She describes her tech- niques.She is using a new kind of paint, an ink acrylic.She has an intensity of colour."
