RECORD TALK OF THE rp i n r, t • ™ lownships INSIDE Klein proves his success goes beyond American Pie movies see Page 7 The Weekly Guide to Arts & Entertainment in the Eastern Townships February 15-February 21, 2002 Adjusting to the changing times .¦ HÜÊ ÉÜL PERRY BEATON/SPEC1AL Despite a majority of women in most dance classes, hip hop is attracting many men to the classroom according to Sherbrooke dance instructor Joelle Blanchard.The director of LArabesque Ecole de Danse says she welcomes hip hop dance with open arms because it attracts a wider audience.Look What’s Inside SOUTHAM Champion oyster-shucker John Bil demonstrates his special technique.Norman Gladu makes his dream a reality as the Viewpoint Arts Centre opens.S 1 fiddler Edward Cousteau is still going.Hip hop dance latest fad to take centre stage By Trida Davidson Record Correspondent Mixing old and new, adapting to the fads of the day and playing on the popularity of everything from Top 40 hits to 1920 classics, dance has gone through a lot in recent years, but as local instructors admit, dance is something that will never go out of style.Joelle Blanchard, director of L’Arabesque Ecole de Danse in Sherbrooke, says that from ballet to jazz, folk to salsa, jazz to tap and ballroom to swing, she’s seen it all.Growing up on the road, Blanchard studied dance in Quebec, Ontario, British Columbia, New York and Europe — basically where ever her parents her transferred to because of their work.In 1986 she accepted a position as instructor at L’Arabesque Ecole de Danse, purchasing it three years later and turning it into a non-profit institution the following year.Currently, Blanchard enjoys teaching classes in addition to running the school.She says despite all the recent dance trends, it always comes down to the basics.“Ballet and jazz dance are two forms of dance, but you can mix it up from there," she admits.“Dance is a beautiful form of expression.We can express ourselves and our emotions and it is something that you can always learn and improve on." According to Blanchard, hip hop dance is now the rage among most younger age groups.“Hip hop is using elements from jazz dance that I saw 20 years ago,” she admits.“Whatever the kids want to call it, whether it is hip hop or jazz, it is good because they are out there practicing it.I don’t mind what they want to call it, so long as they are doing it and enjoying themselves." Armstrong Southam News If you’re hesitant about buying oysters to open at home, you might be seriously intimidated by John Bil, Canada’s champion oyster-shucker for the past two years.His personal best: 18 opened in one minute 29 seconds, or about five seconds each.Bil, who was in Montreal from Prince Edward Island on his way to an oyster-shucking competition in Toronto, says we can easily learn how to open this delectable shellfish if we practice.“It’s the first 20,000 that are the hardest,” said the quiet-spoken oyster man, knifing into oyster after oyster in the kitchen of Le Globe Restaurant.“Get good at it first.Fast is going to come,” he advised, then took us through the oyster-opening system he has perfected.First, he stuck his blade into the narrow end of the oyster, at the hinge, and gave it a quick push and twist, popping the two edges of shell apart.The oyster flesh still connects the two shells, so next Bil ran the blade along the inside of the top shell, separating it from the flesh, which allowed him to discard the top shell.Working at lightning speed, Bil then used his blade to flick away tiny bits of grit from the oyster, then poked the blade under it to loosen the delicacy from the bottom shell.Onto the plate of crushed ice and ready for dinner went the oysters on the half-shell, accompanied by Bil’s tip: “Eat from the wide end and preferably au naturel.” If you add lemon juice or cocktail sauce, “you miss the nuance of flavour,” he warned.Adding lemon, he said, is “a cult” practice.Lemons don’t come from the cold Atlantic waters, home of what to him are the best oysters in the world, the Malpe-ques.Lemon adds "a tropical flavour,” Bil said.And cocktail sauce is even worse to this connoisseur of oysters, which he calls “a sort of mythical food.” The flavoured tomato sauce “makes everything taste the same.There’s a comfort level in that.Some people are uncomfortable with oysters and they’ll find the sauce a familiar flavour.” If you must accent a fresh oyster, the best, in his opinion, is a mixture of white wine or apple cider vinegar and chopped shallots.Bil runs an oyster-packing plant in Ten Mile House, P.E.I., and also cultivates the shellfish.Oysters are like grapes, he said.Both variety and climate are controlling factors.“A Chardonnay grape in Chardonnay (in France) and in Ontario are different.Oysters from P.E.l.and New Brunswick are different from oysters from Long Island and the Gulf of Mexico.” And not as good, he inferred.Bil approves of the way chefs and restaurants now like to serve this shellfish year round, and not just in the months with the letter R in them, which he calls “the old story” of when oysters were at their best.He recommends Atlantic oysters from May 1 to Feb.14, skipping March and April.Malpeques from Canada are currently a fashion in New York restaurants; supplies often run short of U.S.demand, he said.U.S.oysters from the Virginia coast tend to taste “muddy, like wine that’s corked.“They only take two years to grow while ours take five years.” He cut open the oysters with bare hands.Was this a show for our camera, or would he normally wear a protective glove?I asked.“Only hacks use gloves," said Bil, whose oyster expertise brought him sixth place in last September’s world oyster-shucking contest in Ireland.What about those canned, shelled oysters?Read the label, Bil suggested.These shellfish might be packed in Canada but they’re fished off Korea, he said.West Coast oysters are smaller, “about the size of a loony,” and good, he said.Globe chef David McMillan said, “They’re a good frying oyster, more dense than ours.” Keep it simple when cooking oysters, the two agreed.McMillan likes to add oysters to a corn chowder that contains potatoes, mushrooms and little pieces of salt pork.“Add the oysters at the last minute and cook them just until they ruffle up,” the chef said.Advertise in our Career Section Many Record readers expect to art-lovers Townships artist sows the seeds of culture Viewpoint Arts Centre opens in St-Isidore-de-Clifton By Jake Brennan Record Correspondent I go around sowing seeds of culture.Some sprout, some don’t,” says painter and sculptor Norman Gladu.It's an apt metaphor for someone trying to see his traditionally urbane discipline — the fine arts - blossom in his rural community of St-Isidore-de-Clifton, near Sawyerville.On Jan.27, Gladu's latest cultural seed, the Viewpoint Art Centre, opened in front of a packed house of politicians, representatives from the Quebec Cultural Centre and the general public.A longtime champion of the visual arts, Gladu proposed to the town of St.Isadore his idea to convert their unused town hall, beautifully situated on a hilltop, into an unused town hall in St.Isadore de Clifton.exposes rural people to the arts.Viewpoint has two main functions, the first of which is to offer courses in painting, drawing, art history and general art discussions.Course have already kicked off, running every Thursday night since November, and is instructed by Gladu, one of many who donate their time at the centre.The 12 students enrolled in the course cover the spectrum of artistic ability, which reminds Gladu of “one of those old one-room country schools, where you’ve got the whole range of students — especially since it’s in the same rural setting.” Viewpoint’s second function is to serve as an exhibition space for artists to hold solo or group shows.“It’s a place to show art to a community — to show them what art is all about,” said Gladu.“Just because you spend all day in the fields doesn’t mean you don’t like the arts.Everybody needs culture in their lives.It’s a pretty special mandate we have.” The artists who exhibit at Viewpoint also gain the advantage of not having to deal with traditional, more commercial galleries.Gladu contends that “the art scene is shifting over to art centres that give artists more control than regular galleries.” According to Gladu, several galleries in Sherbrooke, including Galerie Horace, also claim much less commission than the whopping 40 or 50 per cent taken by many commercial galleries.Such high rates drive prices up and, consequently, sales down.One artist benefiting from this new trend in the commercial art scene is Monique Martin, a realist oil painter from Saskatoon whom Gladu described as “a dynamo of energy.” Martin took part in a group show at the very selective Mendel Art Gallery in Saskatoon last year, and is represented by the Brigitte Desroches Gallery in Coaticook.Created five years ago when Coaticook agreed to financially fertilize Gladu’s seed idea, the program covers the living expenses of a selected artist for a period of anywhere from two months to one year.A large, formerly empty space above the library serves as apartment and studio, and the artist has only to cover his or her food costs.Martin was last year's artist in residence, and will be baring the fruits of her stay at an upcoming exhibition at Viewpoint entitled Naked Soul; Working Mother.The dozen-or-so canvases on display examine the balancing act of home and work life faced by working mothers, including the artist herself.The exhibit will be unveiled Friday, Feb.22 at 7 p.m.“When we have an opening, it’s not all serious.It’s like a big family reunion,” said Gladu, who has been a professional artist for more than 20 years.Exhibiting in galleries in Montreal, Toronto, Los Angeles, New York, and Boston, Gladu joked “my stuff gets around a lot, but I stay here — it’s not fair!” But Gladu’s devotion to his familial community is obvious, and he said it was his love of people that spawned the idea for Viewpoint.“I just like people to gather and exchange,” he explained.“I Jr.returns to Sounds to soothe the savage beast roots with latest album Hank Williams Jr.’s career has come full circle with his latest album Almeria Club.The artist, who was nicknamed Bocephus by his legendary father, has a history of being an extremist at times.Williams Jr.has really rediscovered his roots with the new disk, named after a former nightclub.The former hot night spot was host to a legendary performance by Williams $r.and his mother, Audrey, in 1947.In the liner notes, it tells the story of a guy, who’s upset about finding his girlfriend at the nightclub with someone else, showed-up with a shotgun to settle the problem.People at the club opened a window behind the stage, urging Williams Sr.and his wife to get out to avoid any danger.Eventually everything was kept under control, allowing both l ausicians to come back in and resume the show.The decision to turn this old, three room building, which is situated only four miles down the road where Williams lives, into a recording studio, was made after Williams Jr.heard local tales about the event.Being the extremist that he is, Williams Jr.moved racks of high-tech digital recording equipment and musical instruments into the building.He also rounded up a stellar group of musicians including former members of The Beach Boys, Fleetwood Mac and $tevie Ray Vaughan’s Double Trouble.To help co-produce the album, Williams Jr.turned to talented Chuck Howard.The results are outstanding.Williams Jr.penned 11 of the songs included on Almeria Club, including two covers of a Thunderhead Hawkins’ classic, ‘Last Pork Chop’.The first version features Williams Jr.on lead vocals, while the second one is an infectious, nitty, gritty soulful blues instrumental.The following number, ‘Go Girl Go', sounds like good old time rock ‘n roll number — a real reminder of the popular single ‘Johnny B Good’.Also featured is the single ‘The ‘F’ Word’, which compares the country music lyrics to other musical genres.Other singles on the Almeria Club includes ‘X-Treme Country’, which is true to its pure Texas style country, and the comical number about full figure girls in ‘Big Top Women’, which is set to an infectious boogie beat.Like the second version of ‘Last PokChop’, the single ‘The Cheatin’ Hotel’ is true blue country about getting caught being unfaithful, and not being able to stop.‘Outdoor Lovin’ Man’ tells as story like an autobiography as Williams Jr.describes the type of life he likes.The song has a bluegrass-fell to it, as the melody marries perfectly to the story.Again tracing his families musical roots, ‘Tee Tot $ong’ is the story of how Williams $r.learned how to play the blues from Rufus Payne.As the song talks about, the incorporation of blues to country would change the world of country music for ever.While Almeria Club offers several great songs, the gem here is ‘Cross On The Highway’, which was actual’y recorded at a Kansas City church.The gospel number was written by Williams Jr.as a tribute to two of his best friends, Michael Tellis and football star Derrick Thomas, who died in a car accident.To round out this wonderful collection, Williams Jr.added ‘America Will $urvive’, the new version of ‘A Country Boy Will Survive’ which he debuted at Nashville's Country Freedom Concert benefit in October following the events of Sept.11.If Williams Jr.’s last several albums didn’t get much of my attention, I must admit that this extreme return to the roots is more than appealing.It not only mixes old blues with some old country, but adds a tiny touch of modern
