Ben Stiller shines in new film .see Page 7 TALK OF Great delights and a warm reception at Le Madrigal .see Page 2 H F I : o Arts & Entertainment in the Eastern Townships De Laforest extends stay with orchestra Director has carved niche with Sherbrooke Symphony By Danielle Tremblay This week and for the first time, French Connection launches a series of monthly portraits featuring distinguished artists and partners in the cultural development of our French-speaking community and the Townships as a whole.2001 closes in style as I recall my meeting with Stéphane Laforest, Sherbrooke Symphony Orchestra's energetic and amiable conductor.Stéphane Laforest is a man of mind-boggling action and purpose.His initial four-year contract with the Sherbrooke Symphony Orchestra has just been extended five years.Laforest also conducts Lanaudière’s Sinfonia (which he founded circa 1995-96), and is currently guest conductor of the London (Ontario) Symphony Orchestra as well as other ensembles throughout Canada and Europe.One of the most striking characteristics of the musician and the man is his simplicity and direct approach.“1 try to be really honest and it’s difficult sometimes in the work I do.Directing many orchestras.I’m dealing with many different levels of musicians and on top of that, I always want to reach the public,” he said during a recent interview.“I see myself as demanding, for the musicians and, most of all, for my performance as a conductor.I like to maintain the utmost fidelity to the music and pursue constant professionalism.I also use my energy to communicate ourlove of music to the general public and I put a lot of time into that.” PERRY BEATON/SPECIA1 Stéphane Laforest demands as much from the musicians as he does from himself.One example Laforest likes to remember involved linking the orchestra and its chiefs performance with Hockey Night in Canada! From the silky jazz sounds of Diana Krall to smooth French-language interpretations of classic Christmas songs, the sounds were soft and created just the right atmosphere for a leisurely meal.Our host also offers pearls of wisdom in between courses, like telling us, “The best way to live is to feel for everything you do.” Anytime we asked for anything, Massé always made sure to say, “With pleasure.” If more people loved their jobs as much as Massé does, the world would indeed be a better place.Claude is a whiz with his hands in both his culinary craft as well as carpentry.While re-creating classic French cuisine (there’s no nouvelle cuisine here), he was concurrently working on building cabinets, doors and floors for the auberge part of the business which opened just last June.Massé is proud to say he single-handedly built the 11 rooms they now have open for the public.Her own sense of classic style is evident in the decor of each room.Along with the opening of their auberge, the couple inaugurated a new dining room in the new wing they built onto their home.This is not as warm as the old part of the house, which has deep colours, wainscoting and lots of wood creating the atmosphere.This dining room has beige walls with no wainscoting and light pine floors and doors.Even the Christmas tree is filled with white lights.The effect is a little bland; the room would benefit greatly from the addition of some rich colour such as burgundy.Massé’s personal warmth goes a long way in malting up for this.Also, beautiful Townships artwork decorates all the walls at Le Madrigal.The word madrigal (a medieval lyrical poem) conjures up images of Camelot and King Arthur and the Knights of the Round Table, a time of chivalry and honour.Massé's and Claude’s idea for their restaurant was to create a gentle experience marked by courtesy and gallantry, a refreshing mandate in this day and age.Our welcoming host delivered some appetizers while we perused the menu.This was a plate of duck pâté with pistachio nuts, melba toast rounds and couscous cooked in maple syrup.The pâté was good, featuring a hint of pistachio with the duck.The couscous was quite sweet yet worked pretty well with the pate.The way the menu works at Le Madrigal is that any main-course item may be ordered as a table d’hôte or à la carte.If you want the table d'hôte option, you have a selection of appetizers and desserts to choose from.By being able to create your own evening special, the table d’hôte is the recommended way to go.I started with the seafood soup while my companion began with the goat’s cheese salad.The soup was disappointing.It suffered from a lack of seafood, was not warm enough and tasted a bit bland (the cream was too obvious).The goat’s cheese salad was much better.It featured a small round of warm cheese and roasted almonds on top of mixed greens sprinkled with a balsamic vinaigrette.The balance of the goat’s cheese with the nutty toasted flavor of the almonds proved to be a fine counterpoint.For the main course, we went with the Steak Diane ($31.50) and the Chefs Fish Suggestion of the Day ($23.95), which was Mahi-Mahi.Other interesting choices were pork filet mignon with a fragrance of mint and porto ($20.95), veal sweetbreads in a Madeira sauce ($26.95) and Brome Lake ostrich with a sherry and blueberry sauce ($29.95).The Steak Diane was done with great style.The slightly charcoaled steak was covered with strong mustard and then flambéed right in the dining room with shallots, mushrooms, cognac, red wine and a demi-glace sauce.The patron who orders this must go to the section of the restaurant where Massé is set up to flambé and watch the action.The steak was cooked to a perfect medium, the flavours blending brilliantly together.It was a totally satisfying dish.Unfortunately, the Mahi Mahi was nothing special.The grilled fish was slightly overdone and thus not as succulent as it should have been.Both dishes were served with excellent accoutrements.Massé was proud to tell us we would receive five vegetables and six flavours along with potatoes.Each dish resembled an artist’s palette.The tender-cooked vegetables were beautifully slivered zucchini, but-terflied baked tomato, mild baby corn, the surprising addition of tasty okra and delicious mashed carrots with sweet potato (thus the five veggies with six flavours).Also served were Dauphine potatoes (mashed and broiled), which were just fine.A cheese plate is offered before dessert, but be warned, it’s an additional $4.95 charge.The selections were tasty, including a blue cheese from the Saint-Benoit-du-Lac Abbey, a light, firm cheese from Kaiser in Noyan, and a French camembert made with raw milk.The plate features melba toast rounds and red grapes.Dessert featured a choice of “daily inspirations” or chocolate cake, fruit tart or ice-cream with either crème de menthe or espresso on top.Massé was pleased to bring us a bit of all three of Claude’s inspirations.The floating island with a sweet, baked meringue on maple syrup cream.It was fluffy, light and a delicious end to any meal.The apple and pear clafouti was prepared Normandy-style with fresh apples and pears with calvados.This was fruity and moist.The crème caramel was very fresh, made the traditional way with the addition of a bit of Grand Marnier in the centre of the flan.All were quite delicious.Very good, strong coffee followed, ending the meal on the right note.The dinner for two, not including wine or gratuity and with the addition of two cheese plates, was $75.Although our culinary adventure at Le Madrigal was mixed, nothing beats the warmth of the service.It’s a restaurant that deserves to be experienced.Auberge Le Madrigal, 46 Bromont Blvd, Bromont.Open daily for dinner.Reservations preferred.Mostly nonsmoking, WITH A SMALL SMOKING SECTION CLOSE TO THE KITCHEN.LICENSED.CREDIT CARDS ACCEPTED.TEL: 1-877-534-3588 OR 450-534-3588.WEB SITE: WWW.LEMADRI-GAL.CA. The aroma of freshly baked cookies is part of the season’s magic - it gives us automatic recall to what we adored as children.And even if you don’t do a lot of baking during the year, a batch of home-made cookies is a must for the holiday season.If you only have time to bake one batch of festive cookies, why not choose a traditional favourite?More than any other holiday sweets, shortbread and fruitcake sing out Christmas.There was a time when most sweet platters were piled with Christmas goodies including slices of light or dark fruitcake.Large, heavy fruitcakes were baked four to six weeks prior to consumption and stored to mellow in a cool dry place.We have created a twist on the traditional with our updated favourites: we dropped brandied fruitcake batter into pretty candy cups and added toasted hazelnuts and drizzled chocolate to our shortbread stars.You’ll enjoy sharing these home-made-ffom-scratch treats - they give old-time cookies brand new flavour.A splash of vanilla enhances the flavour of toasted hazelnuts in our irresistibly rich cookie stars.Chocolate-Hazelnut Shortbread Makes 60 cookies 3 1/4 cups (800 ml) all-purpose flour 3/4 cup (175 ml) cornstarch 1 cup (250 ml) hazelnuts (filberts), toasted and chopped very fine (see note) 1/4 teaspoon (1 ml) salt 2 cups (500 ml) butter, at room temperature 1 cup (250 ml) icing sugar 1 /2 teaspoon (2 ml) vanilla extract 2 (l-ounce/28 g) squares semi-sweet chocolate, chopped coarse 2 (l-ounce/28 g) squares white chocolate, chopped coarse 2 teaspoons (10 ml) vegetable oil, divided In medium bowl, combine flour, cornstarch, ground hazelnuts and salt.In large bowl, beat butter and sugar until creamy.Beat in vanilla.Using wooden spoon, stir in flour mixture until blended.Turn dough out on to lightly floured surface and knead lightly until dough forms a ball.Divide dough in half; flatten each piece into a disc about 3/4-inch (2 cm) thick.Wrap each disc completely in plastic wrap; chill in refrigerator for about 45 minutes.Roll out each half of dough on lightly floured surface until about 3/8-inch (1 cm) thick.Cut into star shapes with a metal cookie cutter (we used 1 and 3/4 inch/4.5 cm star cutter).Place on ungreased rimless baking sheet and pierce each twice with a fork.Chill in refrigerator for 30 minutes.Bake at 300 F (150 C) for 25 to 28 minutes or until light golden on bottom and edges.Transfer cookies to rack to cool completely.Put semi-sweet chocolate and 1 teaspoon (5 ml) oil in small heatproof bowl.Place bowl over saucepan of hot, not simmering, water (water should not touch the bottom of bowl), stirring until chocolate is partially melted.Remove bowl from saucepan; continue stirring until melted and smooth.Dip fork into chocolate and drizzle over each cooled cookie.Repeat melting process in clean bowl with white chocolate and 1 teaspoon (5 ml) oil.Drizzle a little white chocolate over each cookie.Let chocolate set.(Store cookies between sheets of wax paper in an air-tight container in a cool place for 2 weeks, or freeze for up to 1 month.) Holiday cookies shouldn’t be too time consuming, but Christmas wouldn’t be Christmas without gingerbreadmen.Make the dough a day ahead, refrigerate overnight and bake them when your children can help cut out the cookies.You can freeze the baked cookies, thaw and then decorate later, when it’s more convenient.Three-Ginger Gingerbread Cookies Makes about 38 cookies 4 1/4 cups (1050 ml) all-purpose flour 2 teaspoons (10 ml) baking soda 2 teaspoons (10 ml) ground ginger 1 1/2 teaspoons (7 ml) ground cinna- mon 1/2 teaspoon (2 ml) ground cloves 1 teaspoon (5 ml) salt 11/4 cups (300 ml) butter, at room temperature 1 1/2 cups (375 ml) packed brown sugar 1/2 cup (125 ml) fancy molasses 2 large eggs 1 tablespoon (15 ml) finely grated fresh ginger 2/3 cup (150 ml) finely chopped crystallized ginger In medium bowl, combine flour, baking soda, ground ginger, cinnamon, cloves and salt.In large bowl, beat butter and sugar until creamy.Beat in molasses, then eggs, one at a time.Beat in fresh ginger and crystallized ginger.With wooden spoon, stir in flour mixture, a third at a time.Divide dough in half; flatten each piece into a disc about 1 inch (2.5 cm) thick.Wrap each disc completelyin plas- tic wrap; refrigerate overnight.Roll out each half of dough on lightly floured surface until 1/4-inch (5 mm) thick.Using floured gingerbread figure cutter (we used one 4 3/4-inch/12 cm tall), cut into shapes.With spatula, place gingerbread persons on ungreased rimless baking sheet, about 1-inch (2.5 cm) apart.Form scraps into a ball; chill for 15 minutes.Roll and cut remaining dough and scraps.Bake at 350 F (180 C) for 8 to 10 minutes or until bottoms are barely browned.Let cookies cool on baking sheet on rack for 5 minutes, then transfer cookies to râck to cool completely.Decorate as desired.(Store cookies between sheets of wax paper in an air-tight container in a cool place for up to 3 days, or freeze for up to 1 month.) the staff were very helpful whether it be providing information or helping you on and off with your luggage.Colleen was awaiting to welcome us on our arrival at the Swan Motel, even though it was quite late in the evening.We enjoyed a chat with her each morning over coffee and muffins and she was a mine of information on anything we wanted to know about Stratford or the theatre productions.We started off our weekend with lunch at the Tapuz where we had delicious cauliflower soup with saffron and sourdough bread, before going on to the Festival Theatre to see The Sound of Music.What a simply flawless production, it was excellent and we came out feeling totally uplifted.Friday evening continued with a visit to the Avon Theatre to see Brian Bedford in the comedy, Private Lives.The Avon will now undergo complete renovations before the 50th season begins next spring.Saturday was a busy day with a tour of the costume warehouse in the morning.We saw so much there, all the many props used and so many different costumes painstakingly made and accurate to the times portrayed.We learned lots of interesting tidbits such as the fact that in musicals, the actors have a microphone in their wig, and that the costumes are sprayed with vodka after each performance to dispel body odour! We could even try some of the costumes on if we felt inclined at the end of the tour.We enjoyed supper at Toni’s bistro and sampled such delights as a pastry starter with hot camembert cheese and “potted lemon” for dessert, before going back to the Festival to see the production of The Merchant of-Venice, one of Shakespeare’s great romantic masterpieces.Sunday morning we arrived at the Festival Theatre ready for our tour back-stage which gave a whole new outlook when back in one’s seat.Again, more tidbits about actors, such as the explanation that Cynthia Dale could get from her opening ‘Day in the Hills’ post high on the set to the room of the Mother Superior down below in the abbey quickly by actually using a slide! Sunday afternoon we were back at the Avon to see Henry V, quite a change of pace from the other performances.Powerful! After spending time perusing the gift shop we went across to the Sun Room where we had the most delicious supper.There was pumpkin-zucchini soup, rack of lamb and Bailey’s chocolate pudding cup! The motel was out of town so we had 14 taxi rides with Radio Cab to and fro.Cabs were comfy; usually older and large.Cabbies were very helpful and always on time; one told us we were riding in Mrs.Gretzky’s (senior) ex Lincoln Town car! The New York Times says that he possesses "one of the freshest voices in American movies." And the Disney organization's Touchstone division is starting to envisage a procession of gold statuary as it senses Oscar possibilities for Anderson's latest movie, The Royal Tenen-baums.This tragic-comic piece of social commentary about a highly dysfunctional New York family arrived in New York and Los Angeles the weekend of Dec.14, accompanied by imposing (and expensive) double-page colour ads in the newspapers.It is moving gradually into other cities - its first appearances in Canada will be Dec.21 in Toronto and Vancouver - and Disney hopes that word of mouth and good reviews will build an Oscar momentum for it.Anderson is trying in his own way to help with that momentum."I'm supposed to go out and talk to people about the movie and try to communicate about it, but that's just about it," he says.But already he's fretting about his film's box-office potential."We didn't spend that much money on it - $25 million - and that's really low for a studio.So we ought to be OK theoretically, but if the movie only grosses $8 million we have a problem." Still, that lowly budget - less than someone like Arnold Schwarzenegger now gets for a single film performance - was enough to bring in an impressive array of acting talent that includes two-time Oscar winner, Gene Hackman, Angelica Huston, Ben Stiller, Oscar-winner Gwyneth Paltrow, Danny Glover, Bill Murray, Luke Wilson and Owen Wilson.It presents a dysfunctional family to end all dysfunctional families - one critic has already labeled the movie "a bleak farce" - and inhabits Anderson's skewed vision of Manhattan.Hackman - who has publicly described his character as "very peculiar" -plays Royal Tenenbaum, a feckless narcissist and failed businessman who has launched a cunning and deceitful campaign to return to the bosom of the family which threw him out 20 years previously.Huston plays his estranged spouse.Stiller, Paltrow and Luke Wilson play his miserable grown children: they were once child prodigies, but a voiceover tells us that their youthful promise "was subsequently erased by two decades of betrayal, failure and disaster." Stiller's character, a financial genius as a child, is now a grieving widower, obsessed that disaster will now strike his two motherless sons.His younger brother (Luke Wilson), was a brilliant child tennis prodigy until he suffered a breakdown; now he travels the world in tramp steamers.Sister Gwyneth Paltrow was a prominent playwright at 14; now she's consumed by failure, and is pining her life away in meaningless marriage to neurologist Bill Murray.Then there's Owen Wilson, the childhood friend who always wanted to be like them and who now appears to have made it as a young literary icon.The re-emergence of the father whose insensitivity so traumatized them years before forces all of them to reassess their roles in life.Some critics have suggested that Anderson's films lack irony, a diagnosis that puzzles him.For his part, he argues that his screenplay - which he cowrote with old friend Owen Wilson, a regular partner in these enterprises - offers a mixture of sincerity and irony.Some might say that's an odd combination of moods; others might say that this is simply the idiosyncratic Anderson being Anderson.To complicate matters further, it should be recorded that there's not an ounce of irony present in his sincerely delivered observations concerning this blending of moods."I've had a lot of people say that our movies are sincere, that they are tired of movies which are ironic.But I would say there's .tons of irony in this movie." But he also says it has a "sin- cere" feeling."We have affection for the characters.We want to be respectful to the characters, and I think there is a sadness about the whole thing and also something sort of wistful.Hopefully, I don't want to have characters which don't have some appeal." Anderson's first feature film, the 1996 Bottle Rocket, was made on a tiny budget and dealt with a released mental hospital patient who joins forces with his friend in a hair-brained scheme to go on an amateur crime spree - only to run into trouble when a real criminal crosses their path.In this film, as well as in the subsequent Rushmore and the current Royal Tenenbaums, Anderson deliberately pulls his sting."Well, I like all the characters," he says a trifle defensively."I don't want to have characters that people dislike." He even wants people to have affection for the patriarchal rogue portrayed by Hackman.But, he adds, almost as an afterthought, "this father is nothing like my dad, and I want to make that clear." The Royal Tenenbaums marks the first time Anderson has worked with so many top-flight actors.He initially found it intimidating."But I quickly became comfortable with them.They were very nice." Cast members even adjusted to his "weird idiosyncrasies" as a filmmaker - for example his habit of working out a scene in his own mind and his reluctance to block it out with the actors in advance or even rehearse them until it's almost time to shoot.But sometimes he reverts to the traditional approach "because I might not have an idea I'm excited about." Then he relies on the spontaneity of his actors."Actors always surprise me .actors have ideas." But generally his attitude is that if he starts out with "a really great costume idea for somebody's character" it's pointless to replace it."So most of them have to wear the same things throughout the movie."
