U L AYA I LAVANDE DW QUÉBEC fffff • MU» ÉÉÉÉMÉÉ ut ique Picnic area INSIDE This little piggy see Page 2 INSIDE Best wizards see Page 8 Weekly Guide to Arts & Entertainment in the Eastern Townships The mother of Acadian music THE RECORD, July 13 - July 19, 2007 Edith Butler mixes past with present By Nancy Nourse Record Correspondent Edith Butler, the mother of Acadian music, is back.This singer, musician and storyteller was born in the small town of Paquetville, in New Brunswick, but she refers to the Eastern Townships as her home away from home.“The music and heritage that I sing about is completely different from bluegrass or the traditional Quebec music,” said Butler.“The Acadian sound is much more influenced by that of Scottish and Irish traditions.The faster pace songs are more reminiscent of the Irish rhythms.Many of the sad songs were handed down by the early settlers who crossed the sea.“Many of the traditional songs have a rhythm that flows similar to the way a veil floats on the wind.” Indeed, Butler is considered the ambassador of Aca- dian culture and traditions to the world, carrying with her since childhood the songs and tales passed down from generation to generation.She lovingly shares with audiences around the world exactly what makes Eastern Canada so special.Among her many credits are three platinum albums, five gold CDs, and a huge list of honours that includes the Chevalier de TOrdre National du Mérite de la République Française.Many from New Brunswick are musically in-clined^ perhaps due to their strong Scottish background where music was more a way of life than a hobby.Rhythms play an important part in Acadian songs which originate from workers who used the rhythm of the music to facilitate the work that they had to do, while enjoying the pleasant social atmosphere.But Acadian music was not only heard during working hours, its sound also helped encourage a stronger family unit.It was nothing in the early days — and even now — for people to gather in Please see Butler on Page 5 Edith Butler’s music is inspired by Scottish and Irish traditions.Inside: Boogie Wonder Band • Coley • Bon Jovi • The circus! Watermelon Pig 1 Round seedless watermelon 1 Pipe cleaner 1 Piece of pink foam craft sheet 3 Buttons (one large pink and two blue or substitute blueberries) Melon bailer and a bowl Toothpicks or straight pins Wash the watermelon.Cut a slice off the bottom to provide a stable base.Cut the melon 2/3 from the bottom and about 4” away from the front, then slice down to detach top.Place this leftover rind piece to the side for later.Use a melon bailer to cut out melon pieces from the inside of the main piece and place aside in a bowl.Gently scoop out remaining watermelon bits to create a clean “bowl” for serving the watermelon balls.Coil the pipe cleaner to create the tail, and cut ears from the pink foam craft sheet.You can also use a small circle of the rind for the snout, and if you prefer, top with a large pink button.Cut a small circle to mount the snout on from the leftover rind piece.Attach the tail, eyes and snout with straight pins or toothpicks.^ To make the pig hooves, cut four square shapes from the leftover rind piece.At the bottom of each square, make a triangle cut to define the hoof.Attach the hooves with toothpicks or pins.Fill the bowl with the melon balls.Carving tips Have the whole watermelon at room temperature when you carve (you can chill it in the refrigerator after cutting and before serving).Cut a small, thin, flat piece from the bottom of the watermelon before carving.This will make a flat base.Draw the design on the watermelon rind with a fine/medium point waterproof marker or a sharp pencil.Insert toothpicks in key places to use as guides for your cuts.Use a sharp knife with a pointed tip — the sharper the knife, the easier and cleaner the cuts will be.For better grip and to help protect your hands, use a new thick pair of gardening gloves with gripper palms.R>r more detailed designs, draw a template first on a sheet of white paper with a marker or pencil.Transfer the image to the watermelon surface by taping the paper to the melon and tracing along the design’s lines with a pencil, making the design right on the watermelon surface.When attaching cut pieces on the watermelon to make your design, use round toothpicks or skewers.Flat toothpicks will often break due to weight of the piece or the thickness of the rind.Shrimp and Watermelon Watercress Salad 3 tablespoons softened butter 1 teaspoon gran ula ted garlic 2 tablespoons grated Parmesan cheese 1 18-to-24 inch sourdough baguette 2 or 3 ounces of fresh stemmed watercress 4 cups seedless watermelon balls 12 potato chip-sized shaves of aged white Cheddar cheese 1/4 cup balsamic vinaigrette of choice 16-20 chilled cocktail shrimp (optional) Mix together the butter, garlic and Parmesan.Cut the baguette in half.Slice the halves down the center to form 4 pieces of bread.Spread the butter mixture evenly over the cut side of each piece of bread.Place on the rack of a preheated 400-degree oven and bake just until browned.Wrap in foil and keep in a warm oven.Sprinkle the watercress over 4 salad plates.Add the watermelon balls, cheese, and shrimp if desired.Drizzle with vinaigrette and serve with the warm bread.Serves 4.Grilled Scallops and Watermelon Kebabs 12 sea scallops 4 cups boiling vegetable or chicken broth 24 1” x 1” watermelon cubes 1/4 cup soy sauce 1 tablespoon sesame oil 1 tablespoon minced garlic 1 tablespoon fresh minced ginger Cut the scallops into halves across the diameter to create half-moon shapes.Place them in a heatproof casserole dish in a single layer.Pour the boiling clear broth over the scallops and let them poach for 5 minutes.Drain and cool the scallops.On each skewer alternate 1 half-moon scallop, then 2 watermelon cubes, then another half-moon scallop.Mix together the soy sauce, sesame oil, garlic and ginger and brush the kebabs as they are grilled over a medium hot grill for about 90 seconds per side turning once.Serve warm.Serves 12 as an appetizer.Crabcakes with Watermelon Dipping Sauce 8 ounces cooked, shelled and picked over crabmeat, drained 2 eggs, lightly beaten 1 tablespoon mayonnaise 1/2 cup seasoned breadcrumbs 1/4 cup drained sweet pickle relish Butter for hying 1 cup minced and drained watermelon 1/2 cup bottled chili relish In a bowl, mix the crab, eggs, mayonnaise, breadcrumbs and sweet pickle relish.Heat a generous amount of butter (you may use a combination of canola oil and butter if desired) in a 10- to 12-inch sauté pan over medium high heat.Using 2 teaspoons as tools, drop small dollops (about 1 teaspoon full) of the crab mixture into the butter and fry, turning once, until golden brown on each side.Fry the crabcakes in batches keeping them warm on a baking sheet in the oven as they come out of the pan.Mix together the watermelon and relish and serve with the crabcakes for dipping.Makes about 16 crabcakes, serving 8 as an appetizer.Toasted Jalapeno Tomatillo and Watermelon Salsa 10pounds medium tomatillos (peel off parchment-like coating and rinse) 2 cups vegetable oil 4 pounds white or sweet onion, minced 1 cup fresh minced garlic 1 pound jalapeno peppers or to taste, seeded and chopped 1 cup ground cumin 2/3 mild chili powder 1 quart tomato sauce or puree 5pounds watermelon chunks, seedless or with seeds removed Kosher salt Cut the tomatillos into quarters.Heat the oil in a large heavy sauté pan over medium high heat and in it sauté the onions for a few minutes and then add the tomatillos, garlic, and jalapenos.Sauté until the onions and garlic begin to brown.Reduce heat to low and sprinkle the cumin and chili powder over the pan.Stir in the tomato sauce and bring to a simmer.Remove from heat.Cool.Place in a blender or food processor with the watermelon and puree.To serve, after the salsa is dished, sprinkle with salt.Watermelon Cupcakes 8 cupcake liners 8 cupcake shaped pieces of seedless watermelon, (see below) 2 cups pineapple cream cheese frosting Sprinkles for garnish Place the liners in an 8-cup cupcake tin.Cut 3-inch thick slices of seedless watermelon.Cut round cupcake sized pieces from the slices.Put a watermelon ‘cupcake’ in each liner.Place a dollop of frosting on each cupcake.Decorate as desired with wonderland, baby.With a series of shows at the Vieux Clocher this month, the Boogie Wonder Band make their return to Sherbrooke.It’s one more stop in the travel-loving group’s 1,500-plus career live shows and 11 years together.While disco may have flatlined in the late 1970s, the Boogie Wonder Band’s live shows are plush with raucous covers of disco classics, platform shoes and hanging mirror balls.The band has found success within their home province (they’re based in Montreal) and in Canada, but they have also found support internationally, with plenty of European, South American and Asian shows under their belts.This has led to a life of travel for the 10 musicians, with singer Kat (each has a faux disco name and identity) saying: “We are always living in our luggage.” But it seems the band wouldn’t have it any other way.They take great pleasure in entertaining a crowd.Live performance is such a thrill that they've released only two studio albums over the years.Band members really do play all of their own instruments (we’re talking guitars, drums, saxophones, trumpets).Bassist Boogie Cindy said they are often asked by fans if they are actually playing or not.Set lists, designed with the crowd in mind, are full of what Boogie Cindy called “sure shots”, with monster hits from the era like Gloria Gaynor’s T Will Survive’, or Alicia Bridges’ T Love the Night Life’ and entire medleys dedicated to Earth, Wind and Fire or KC and the Sunshine Band.The band also emphasizes visuals: The wacky costumes are elaborate and true to the era, while the choreography is well-practiced and flows with the lasers and lights that flood the stage.There’s also lots of audience interaction.The three singers might singly or all at the same time be out in the middle of the dance floor with the fans.It’s all about having fun, with Boogie Cindy describing the effort put into their live shows: “You never know who’s going to be in the room to see you so you can’t let yourself take a night off.” Gloria Gaynor herself, perhaps?Over the 11 years, there have been personnel changes (seven of the 10 original members remain), and they’ve played shows with audiences that range from, according to Boogie Cindy, "nobody to thousands." gives us purpose, grounds us, strengthens us, and focuses us so that we can better move ahead for a brighter tomorrow.” The idea behind the show is to recreate, in a modern-day context, what our pioneer forefathers went through when they opened up and inhabited the Townships.Always in need of strength and understanding they often turned to the church for answers.Today, the church, so to speak, has changed and reflects more of an ecumenical community, a community ready to bridge the divides that were created by divisive religious denominations.“Have you ever noticed that the sense of community is missing?People do not seem to be aware of what is going on around them," says Robillard, “even in their own backyards."
